Famie's Classic Latkes
Sauté until golden brown, turning once
1 Idaho potato
1/2 c flat leaf parsley, chopped
1 egg
¼ c. matzah meal or flour
½ c. onion, diced
Salt and pepper to taste

Bake at 350° for 1 hour, or until brown.
2/3 stick butter or margarine
