Matzah Meal Pancakes

Ingredients
1/2 Passover matzah meal
3/4 tablespoon of salt
1 tablespoon of sugar
3 eggs - separate whites and yolks
3/4 cup water
3 tablespoons olive oil
Directions
  • Mix matzah meal, salt, and sugar
  • Beat egg yolks with hand mixer and combine with water
  • Combine matzah mixture and egg yolks
  • Using a hand mixer. beat egg whites until stiff and fold into the mixture
  • Heat large saute pan over medium/high heat and add oil
  • Lightly fry pancakes in oil until brown on both sides
